An oh-so-easy way to cook up egg noodles. When water comes to a rolling boil, turn off the heat. Add the noodles and cover the pot. Let stand for 20 minutes, stirring once or twice…done!

Salmon Patties

My mother gave me this recipe when I was a young wife…it’s still always a hit.

14-3/4 oz. can salmon, drained and 2 T. liquid reserved

1 egg, beaten

1/3 c. onion, minced

1/4 c. all-purpose flour

2 t. baking powder

oil for frying

salt and pepper to taste

Combine salmon, egg, onion and flour in a medium bowl; set aside. In a small bowl, mix together reserved salmon liquid and baking powder; stir into salmon mixture. Form into 4 patties. Heat oil in a large skillet over medium heat; add patties. Cook until golden on both sides. Sprinkle with salt and pepper. Makes 4 servings.
